During our recent Ilocos getaway in Pagudpud and Vigan, I was finally able to try the popular Ilocos bagnet during our meals at Agua Seda Beach House (the place where we stayed, highly recommendable). I loved it at first bite. It's similar to lechon kawali in Central Luzon but is crispier and more flavorful. It also has a longer shelf life. Or so I learned. You can get it in Vigan or Laoag or just about any other places in Ilocos. We brought several kilos of bagnet (frozen and packed) back to Manila for our families to try. They loved it, too.
Bagnet is best eaten with rice. Dip it in vinegar or soy sauce and you're in for a treat. I can eat it for weeks and I wouldn't get tired of the taste. No sawa factor, really.
